Sweet And Spicy Warm Kale Salad

* This recipe can be served as a side or combined with your favorite proteins and grains to make a complete meal. It’s delicious warm, room temperature or chilled. Can be made up to a day in advance.

Ingredients

  • 2 TB coconut oil (or neutral oil like grape seed, sunflower, etc)

  • 2 bunches kale

  • 1/2 onion

  • 1 thumb of fresh ginger

  • 2–3 cloves of garlic

  • 1/2 cup golden raisins

  • 1/3 cup nuts of your choice (optional)

  • Sriracha, toasted sesame oil, and salt to your liking

Instructions

  1. Prep your veggies: mince garlic, grate ginger, and chop onion and kale as rough or fine as you like.

  2. Heat a large skillet or stock pot on medium and when warm add coconut oil. Once melted, add chopped onion and sautee until just translucent, stirring occasionally.

  3. Add garlic and ginger and stir, sautee for 30-60 seconds and then add in kale and stir. Cook until kale has turned bright green and is slightly wilted but still has some shape, about 2 minutes.

  4. Remove from heat and mix in raising and nuts. Stir well until coated.

  5. Pour the contents of the pot into a heat-proof bowl. Season to taste with salt, toasted sesame oil and sriracha.
